I've read a few post about moulting, does this process affect the performance of the roller?

yep, the moult can cause several issue with performance. Sore wings are probably tops, depending on how far in the moult they are.

how many times a year do our birds moult? or do they only moult once?

Moulting does affect thier performance adversly. They are uncomfortable with some pain during flight and there is a lacking of some very important control and lift feathers. The moult is an annual process that renews thier membership....uh, I mean thier feathers....kinda like the snake shedding his skin....kinda. The moult combined with the weather (hot) in most climates can really takes it's toll on the bird's performance.
I change thier feed mix to be heavy on the protien side of the scale and increase thier rations somewhat to help them with it and to hurry it along as well.

I fly them less. The frequency you fly them, you will have to get a sence for that. ---------- Nick

Give then 25% Safflower with their feed. That will help their feathers.

Yep, I feed a mix of equal parts Safflower; peas; and wheat during moult. Put some vitamin and minerals in the water, too.
It speeds the moulting process up. Some breeders will pluck the primary feathers in the early part of July. I don't, but I do all I can to speed them through. ---------- Nick
