List, With the 3 day weekend coming up. Some of us have extra birds. Not worthy of leaving the property. Anyone have any good recipes for pigeon. Hate to see them grain fed birds go to waste.

Get some cheap bacon and wrap a couple of pieces around the breast. You can hold it on there with tooth pics!Then grill it!
Another way is to put them in a dish and pour cambell's mushroom soup over them and bake them!
A couple of ways that we ate dove, and I bet their a wlole lot better than dove! Especially being grain fed! Mmmm!Mmmm!
Been thinking about trying them myself!

In another time in this country pigeon was a common part of meals in most households. Our Rollers are too small to be of real value on the table, but I once raised Kings just to eat. They are a meat bird that was bred to be on the dinner table. Now they are primarily exhibition birds. Some of the finer resturants have "Squab" on thier menu which is another word for pigeon and it is most generally Kings or Modenas. If you hunt and eat Dove; then you are hunting and eating pigeon.
After plucking them I still like to skin them; the skin brings on a very gamey taste.

Val, The breast meat rapped in bacon sounds real good. Grain fed, how can you go wrong. What if you use a marinade, let it soak for 8 to 12 hours. Then BBQ with bacon and a BBQ sauce. YUM YUM.....

Ray, guarenteed happiness! The bacon will take any of the wild taste out, which shouldn't be much with grain fed!It will also keep the meat from tasting dry. Its a great way to eat pheasant and duck, heard its the only way to eat goose too!

Hey sky cullem ,remove all feathers deguttem wash.. pepper and salt slap on bbque pit.........mmmmmmmmmmmmmmmmm my dad makes pigeon stew with all the trimmings ..thats home made .lol

Here is one for you all:
PIGEON POT PIE
Simmer 2 dressed pigeons until tender in salted water. Remove bones and cut meat into pieces. In a separate kettle place 2 carrot, 1 large onion, 1 potato, all diced, and cook until tender in a minimum of water. When pigeons and vegetables are cooked, combine and place in a 3 inch deep baking dish, using most of the liquid. Top with Oven Biscuit Topping and bake at 375 degrees until biscuits are done, about 20 minutes. Serves 3.
OVEN BISCUIT TOPPING:
2 c. flour 2 1/2 tsp. baking powder 1/4 tsp. salt 2 tbsp. shortening 1 scant c. milk
Combine dry ingredients. Cut in shortening. Add milk. Roll dough, cut biscuits and place on top of pigeons and vegetables. Vegetables and meat mixture should be hot before placing biscuits on top. Serves 3-4.

hey guys just so the newby lol in the sport dont take all this pigeon eating on all to fast. just remember guys, if you give your birds boosters and other meds i would not eat them. you would be sorry you did. now i have never had pigeon. yet, but i do have a book that has lots of recipe,s for it. maybe i will take a photo of the page or pages and post it. this book is from i think 1912 jc

RECIPE #1 PIGEON SOUP WITH CURRY
This is one of the most delicious and nourishing soups of our cuisine. The following quantities of materials will provide soup for 6 people. 2 large pigeons cleaned, singed and each divided into 4 pieces 2 large chopped onions 2 large soup spoon fulls of butter 3 soup spoon fulls of curry powder 5 pints of water 1/2 oz salt a bouquet of parsley sprigs a bay leaf mite of garlic (optional) 6 to 8 tablespoons of rice melt butter in sauce pan, add onion and let cook on gentle fire. Add pigeons and cook for 10 to 12 minutes with the onion. Then pour curry powder over them. stir it all with a spoon and add the water, salt, and the bouquet of parsley bay leaf and garlic. Bring to a boil and cover the saucepan. After 15 minutes of cooking add the rice and let it 20 to 25 minutes. Serve... ENJOY!!!

RECIPE #2 PIGEON AND BARLEY SOUP
Serves 6 2 large pigeons cleaned singed and divided into 4 parts 1 large finely chopped onion 2 medium carrots cut into little squares 6 to 8 TBls cleaned barley 2 large soup spoon fulls of butter a pinch of pepper bay leaf 3 pints of water
melt butter in saucepan, add onion and let cook over gentle fire. Then add pigeons cooking them 8 to 10 minutes with the onion. Add carrots barley water salt pepper and bay leaf. Cover saucepan and let boil on a gentle fire for about 1 hour 15 minutes. ENJOY

RECIPE #3 ESTOUFFADE OF SQUABS (SQUAB STEW)
take 2 or 3 squabs cleaned and prepared for cooking but not tied up. Roast them lightly, and then put them in a terrin (a deep earthware dish). Add a glass of cognac (lol optional for AA members lol) and a glass of white wine, boil for several seconds and then pour it all over the pigeons. surround the pigeons with several little onions browned in butter and 20 mushrooms that have been cut into quarters and sauteed in butter. season with salt and pepper. Add several tablespoons of Good gravy. Lay over the pigeons several slices of bacon that have been slightly browned in butter. Cover the terrine, close and cook in a gentle fire for 50 minutes and serve.

Hey Guys! Up here in michigan we smoke pigeon. Take your culls and breast them out. soak in cup of salt and a gallon of apple cider over night. Rub with season salt and wrapp bacon around each breast. Put in a smoker at 180degrees. smoke with apple wood. About one hour or till inside breast is 165degrees. Take out!! I enjoy it fresh out of the oven. The wife and kids like it cold on crakers and cheese.Up here nothing goes to waste. I don't feed my birds chemicals. Just apple cider vinegar and garil in water. Cod liver oil and brewwers yeast on feed. Always fed grain never tried pellets.ENJOY!!!!

I was telling an aquaintance of mine about my birds and he said he grew up in what was called German Town in Louisville Kentucky. All the time he was growing up his Grandfather and his father raised pigeons for one reason only. To Eat. He said his mother could use pigeon in about 30 different recipies and that they never got tired of it. He said they went to Indianapolis one time for a funeral of a relative and after the funeral they all went to his Uncles house for dinner. They had a lot of fried chicken, and after eating it he told his father that they needed to buy some of his uncles pigeons because they were a lot bigger than theirs were and tasted better. He said that was the first time he had eaten fried chicken. He said he hasn't had pigeon for about 40 years but if he could find someone that could fix it like his mother did he would like to try it again. The man that sold me my first domestic pigeons showed pigeons and all of his culls went into the freezer. His wife would make stews and those pot pies out of them. He also liked them baked with the bacon around them. I tried them once and it tasted just like chicken to me. If I'm not mistaken that is the reason pigeons were domesticated in the first place. Same way with rabbits. I read somewhere that over in Europe they had domesticated pigeons in their attics and they would let them fly free loft and go out and gleen the fields and then they would eat their young. Well, The three day weekend is here and it was time to pull out the BBQ. Tritip and squab.
LOL.......No, just Tritip and albacore. The food was great.
Thanks for all the recipes you guys sent. I will keep everyone and hope to try them someday. I live in LA where we have to prepare for earthquakes. I keep plenty of water, propane and canned goods on the property just in case we have a big one. I also know that I will be one of the only people in the area with fresh meat if this ever happens......lol Nothing like being prepared. I hope everyone is enjoying there three day weekend.

Haven't had the heart to do it to mine yet, but a 1/3 slice of jalapeno over the breast and wrapped in bacon with a little barbque sauce at the end of cooking has always worked great for me after dove hunting. Chad

Ya just can't get a piece of tri tip here. They grind it up here. I think tri tip is a California thing. The best tri tip sandwich I ever had was in Sactamento at the Rivercat's game. They are a Tripple A baseball team for the Oakland A's. Had to eat two, it was that good.

If you skin em out you don't have to worry with the pin feathers and you won't have to singe them, marinate over night in Zesty Italian Dressing, stuff with Jalapeno, wrap in bacon, salt, cayenne pepper, be sure to cook slow and keep moist, they get tough and chewy if they dry out!
Any recipe' for poultry or fowl will work, they are dark meat though.
