Would it be a good idea to fly both of these..or will they be just hawk/falcon targets?

Fly both of them in different days if you don't want to risk both at the same time. You have to know what they are made of to be able to stock the bird. You will walk backswords if you don't see the bird in the air perform. To be able to match the pair you have to know what each of them do in the air.
You never know what fault the bird will carried with out flying it. Even if is from your best pair they can always have a fault. I cull one bird that never I would think off before doing it. This bird was the fastest bird I have bred, 50 feet deep, frequent, with control and good style. The only big problem was that he would of not kit some times. What good will that bird do me if he will not kit every time.

If you are not willing to fly them, then why bother to breed them?
