Is it possible to breed for a certain trait(Quality, depth, speed, frequency,) without Flying your Birds????

If you don't fly the offspring to test them, how do you evaluate your program? If you test them, then stop flying and continue to breed, how do you know if you are maintaining what you are breeding for?
