Here is a great recipe for you serious breeders!
Pigeon Casserole
Ingredients: 2 pigeons 1 oz (25 gm) butter 8 oz (225 gm) stewing steak 1 rasher of bacon 4 pint (300 ml) stock 2 oz (50 gm) mushrooms salt, pepper 1 tablespoon (15 ml) lemon juice 1 tablespoon (15 ml) redcurrant jelly Half ounce (12 gm) plain flour A little water
Method.. Cut the pigeons in half and fry in butter until browned. Cut the steak into cubes and dice the bacon. Place all three meats in a 4 and a half pint oval casserole dish and cover with stock, mushrooms and seasoning. Cover and cook for 2 hours at gas mark 4, 350F (180c). Then mix together the lemon juice, redcurrant jelly, flour and a little water and stir into the casserole. Return to the oven and cook for a further 15 minutes.

Heres one of my favorites; Fillet the meat off of the breasts of the pigeons, Wrap the fillet breast onto a moderate to hotter than hell pepper halve(de-seeded), Wrap with bacon and sear with a tooth pick to hold in place, Place all pieces in bowl and marinate overnite in beer with a little Italin dressing. Place on the BBQ pit low heat, Drink 6 beers from the 12 pack and turn the birds over, Then drink the other 5 beers and the birds will be done.

drank 6 while preparing to cook, 5 while cooking, where did the last beer of the 12pc go? or did you pick up a 12pc with one gone?

Helloooo, you used it to marinate the pigeons with!!!! I guess you forgot after drinking that many beers….cheers.

bIRDS are doing great,stocked a couple of fast ones to put back on parents,also stocked an L.J. HE started rolling nice and I never seen a roller OUTFLY a coopers like this bird! What a sight, ---------- Pat

I really need to see the pic of the finish Cajun pigeon. It sounds delicious and tasty. I've always like to eat pigeon. But this recipe seems good. I'll try it with my cull this weekend to give it some flavors. ---------- W.Cha

Cha - You will like it. Most guys think it is a joke but my family has always eaten pigeon. It is great. Just think a real dual purpose bird. You roll them in the air and in the pot! Also, try some Tony Chacheres seasoning it. This will give it a great taste!

Andrew - If you eat chicken and go to a country farm you will see a chicken is one of the nastiest birds on the farm and picks/eats its own ____. A pigeon is clean and eats good grain. We have been conditioned to think that things foreign are not cool but I grew up eating them so it is normal to me.

Steve - We had rollers, Kings and Racers when I was a kid. My dad mainly used the kings but if you are asking have I ever eating a roller the answer is yes and I am not ashamed of it. It is great!! I cannot see for the life of me why people see it as strange eating animals that you raise. I guess they think the chickens and cows come wrapped to the store. When you raise it you know what you are eating.

Thanks 3757 for the advise. I grew up with my parents cooking pigeon for me to eat and it taste better than those steroid chicken at the market. Those chickens are only about 2 months and they are already packed. So much for healthy America. I'm still planning on using your recipe for sure. My parents usually boil them with all kinds of spices, but sometime I like my BBQ. ---------- W.Cha

Cha - No problem. You are so correct. Chickens in the store are only 6-8 weeks old and are packed with chemicals to make them the selling size that you see in the store. A country chicken at six weeks is very, very tiny and is called a poulet and you cannot eat them at that age. Pigeon is also tasty and healthy. With the price of feed why not eat your culls. I know some will scorn since some people are making big money selling junk for $200 - $300 each.

Andrew - I understand. Are you a vegetarian? If so, that is fine and also best but if you eat meat try it. I guess everyone has a different upbringing and I grew up very acquainted eating pigeon so for me it is normal.
