turkey buzzard, Do you know what possums eat? :( My best advice would be DON'T ! But if you insist, Roast it covered with some potatoes (to soak up some of the grease) carrots, onions, and celery. 350 degrees until tender or you can't stand the smell any longer. :) Add some packaged beef gravy mixed by the instructions the last half hour. Let me know how it comes out. Thom, and yes when I was a kid, I begged mom until she fixed it!

1 possum Salt and pepper and cajun seasoning 1 pod red pepper 1 sweet potato per person
Simmer possum until partially done, changing the stock a couple of times Add a piece of red pepper in the final simmer. Place possum in roaster and then add a small amount of water. Then Sprinkle possum with flour and baste with fat that comes from the simmer add small sweet potatoes and bake until possum and potatoes are browned. Cooking time, from 1 to 2 hours at 350 degrees. Makes from six to eight servings. Man this is good stuff!

I just had a phone call from a guess someone that reads the posts and stated that I should follow 3757's recipe with the exception of cooking it on a chunk of 2" X 12" board and after to possum is done throw it away and eat the board. I couldn't stop laughing!!

If there is a way to make it edible, I have no doubt 3757 could do it. Changing the stock water would help degrease it. BUT! I know what a possum eats and that is everything. :) Thom

If you caught that possum in a live trap. You put him in a cage and feed him up on corn, take feed corn and soak it in water to make it easier for him but he will eat it. After about 2 weeks he will have had time to fatten up and clean out, then you will have a possum worth eating!
After dispatching and cleaning the possum, salt and pepper, par-boil first to remove as much grease as possible, pour off the water, place the animal in a large baking pan, surrounded it with onions, carrots and sweet potatoes, season with salt, black pepper, garlic and cayenne pepper, add about 2 cups of chicken broth cover and Bake at 375 degrees for 2 hours basting every 20 minutes with the juices. Be sure not to let it dry out! ---------- "Semper Fi" SD

Of course ya can eat possum.It,s a Beverly Hills delicacy. The wife and I eat a little cat food everyday,so we,re use to it when we retire.LOL.Glen.

Has anyone ever been in the woods and come up on a carcass thats been there for a while? You know the smell I`m talking about. well. a possum loves that smell and will eat his way into and then back out of that carcass... Eat it if you want... Country boys! The darn thing is nothing but a big fat ass rat. They eat garbage and live in garbage. How can you eat such a thing when there are lots of other things to eat! Catch rabbits instead.
People are not eating their culls which are fed the best of the grains and you expect them to eat that?

When I cull a bird by harvesting, I dispatch it humanely, and prepare it to be eaten. When I have 8 to 10, I wrap a strip of bacon around each, salt and pepper, marinating with Zesty Italian Dressing and grill slowly over a low charcoal fire. Some times there are Dove to go with them and sometimes there are quail, duck or other game. No waste! ---------- "Semper Fi" SD

Jay - I actually eat my culls and I am proud of them because they serve two purposes. Also, country boys know that a chicken is the nastiest thing on the farm (The statement I made is not stating country boys are smarter or better just a little more aware of the animals around them). We had chickens all of my life even after we moved to the city and chickens eat their own shit. So, a possum to me is like "fillet mignon" mon ami but I like racoon a little better. If you ever get a chance Jay try a Guinee fowl. This is the best thing on the planet!

All birds each their shit to build immunity to diseases. But eating stinking carcasses is out of the question for me. Nothing bad about country boys or city dwellers but the eyes eat before the mouth.

Jay - I do not think for one minute that all birds eat their poop or practice copraphagia as it can be harmful to many of them. Where did you find the information on the building of immunity? Anyway, I have said enough already on my possum steak.

LaRon, I agree with you about the racoon vs possum. However my real favorite is beaver. Before some of you demented fellows start thinking the wrong way, I am talking about the ones that swim around and build dams.LMAO Barbequed, they are delicious. Sal - Guinee is awesome. Try this and it will be so good you might even start flying. Here it is.
Season with Cajun seasoning, garlic, green onions, habanero pepper, cloves, parsley and mix with lemon juice. Marinate with a little rum and cook it slow with tomato sauce. When it is almost cook add more garlic and onions and pour the juice over it. Now, if you screw it up the first time drink two glasses of rum, eat the Guinee and try it again the next day.

Thanks for the Guinea recipe Proff! I'll give it a try. I usually just fillet out the breast, pound it a little to tenderize it,soak the fillets, thighs and legs in Buttermilk with an egg whisked in and 1/2cup of Louisiana Hot sauce , dredge each piece in flour with Cajun seasoning, then back to the Buttermilk mix then dredge again, let the pieces sit for a little while before you drop them in the grease, then deep fry at 360 degrees, don't fry it too fast, needs to stay moist! The crust will be crispy! Y'all need to know that Guinea is a dark meat, like duck or goose. ---------- "Semper Fi" SD

possum is good i had a few times when i was younger and tried a snake in my youth tasted just chicken and if i ever had a chance to eat possum and snake again i would jump on like a chicken on a june bug they was very tasting meat..................donny james

Any of you guys want to try and cook these things, let me know my rat terrier gets them all the time running across the back wall. He won't tear them up just breaks their necks and leaves them for me to pickup. Some of these bastards are bigger than him, he only weighs in at 17 pounds.
