I see a bunch of diferent post about eating pigeon.I've never tried pigeon before,does anyone have any recipes?

There are all kinds of recipes. BBQ, BOIL, GRILL, etc. You can almost do anything with it, just like a chicken or turkey. You can stuff it, fry it, and deep fry it. I like mine BBQ with seasonal sauce.

I had ate pigeons before but it was King Homers there is more meat than these lil rollers .my mom use to make me bird soup..

Wrap a piece of bacon arond it, secure with toothpic and slow cook it on the grill!

If you`re gonna eat a mess of pigeons you gotta fatten em up first. Wild bird seed,corn and any fatty seeds you can get your hands on. Keep em in a week or two and "finish" em out.

When you cook em,make a "roller roll" Skin em out whole and put a jalepeno stuffed with cream cheese in the chest cavity,salt & pepper,wrap a slice of bacon around him to hold the pepper. Cook em on the grill nice and slow. Dont dry it out by cooking em too long.

La Ron said he has some recipes,dang ol coonies`ll eat anything.

I have a rotiessery oven. I skin em and put salt and pepper in the cavity, stuff in a bacon slice, wrap one around it and spit it sideways. Stays moist and you can brown the outside good and krispy.

Above all else,i love Rabbit!Great meat.My "Pops" used to breed them for us to eat.My mom could cook 1 hell of a Rabbit!Kind of miss them days.

I've been selling my culls to bird hunters to train dogs and a few at the chicken sale as commons they have been bringing 5 bucks but dropped to 3.50 so i figgured if they dropped again i'd eat them i just wanted to see how everyone was cookin.

Gumbo - The Most Traditional Cajun Food
Gumbo is probably the most traditional cajun food. A gumbo is basically a soup cooked with a roux base. Because of their availability, gumbo is frequently made out of Chicken, but you can use a pigeon. However, you can make gumbo out of many foul (guinea, pigeon, goose, duck, woodcock, dove, quail), game (rabbit, squirrel) or seafood (shrimp, crab and oyster). You can also add any smoked sausage, andouille sausage, tasso, and pigeon gizzards and hearts to the gumbo. Gumbo is a soup and it is usually served over cooked white rice. But don't use a lot of rice, because it is eaten as a soup and not as rice and gravy.

File' (sometimes called gumbo file')
File' (pronounced fee-lay) is the traditional table garnish used on gumbo. The early Cajuns learned to use file' from the Choctaw Indians of the Gulf coast, who evidently used it to thicken soups. File' is ground sassafras (Sassafras albidum) leaves. Go to File' for instructions on how to make your own file'.

File' is sprinkled on the surface of your gumbo at the table. File' makes the gumbo thick if you let it set for awhile. Don't add file' to the gumbo during cooking or else it will make the gumbo thick and stringy. You can add a pinch to the pot at the very end of cooking to thicken the gumbo - but don't add too much or or add it too early while the gumbo is still boiling.

Gumbo is Cold Weather Food
Gumbos are cooked when the weather gets cold. When the first cold spell moves through in the fall is when gumbo season starts. Gumbo is better the next day, so you can eat on it several days during the cold spell.

8-12 pigeons (36-48 lb)
24 lb
3.75 quart (7.5 lb)
1 gal, chopped
1 gal, chopped
1 gal, chopped
2.25 gal (9 lb), chopped
1.5 quart, chopped
1.5 quart, chopped
3 cups, minced
12 oz
1/2 strength to make 12 gal
6 tbs
to taste on table


Make the Roux:

Roux is made by browning white flour in oil or margarine."

Brown pigeons in 3/4-inch oil; remove from skillet. Place pigeons in Dutch oven with soup. Saute onions in margarine; pour into soup. Add mushrooms, parsley & seasonings. Simmer, covered, for about 35 minutes or until tender. Serve over wild rice, if desired.

Andrew - This site is about all aspects of the hobby even fine cuisine. If a person eats chicken they can eat anything. If you ever go on a farm you will see what chickens eat. Pigeons are clean and good for consumption also.

Ralph you have a valid point, my dobe is my home security system as well as my buddy,so i reckon hes's dual purpose.As far as my birds i have'nt found a dual purpose so if they dont roll they must go.P/S I have a lot of friends who went to Vietnam and they say dog is very good but i'll take there word on it.lol

Many people have been conditioned to believe that things that are unfamiliar to them are awful and wrong. This is not always (Note: Not always) the case and in most cases it is not. It happens in every aspect of life even with Rollers. When people do not understand something they downplay it because most cannot think outside of their own world. When people hear a lie so many times they begin to believe it. One group is good the other is bad. Chicken is good for consumption but other things are wrong and we could go on and on.

Once the cream starts rising to the top in your birds, you will see that there is no use for some birds in your loft! There will be culls, more than birds worth stocking! What you decide to do with them, is your buisness!

5 culls cleaned stuffed with lemon and line and salt on outside put in big deep pan pour in 1 6 pack of beer and a half gal of old crow or crown don't matter put in oven 350 for about an hour throw birds to dog drink juice:}
