Just wondering what do you guys do with your cull birds? I normally just give it away to people for free when there no use or there either be in the pot for my dad to eat...LOL...

Chai - This is a great way to enjoy every aspect of your birds. Try it.

I tried this one and it is great. The original recipe was with chicken but I used pigeon instead. It is a great way to enjoy all aspects of the birds. In the air and on the table.

This is another very old dish, invented - or so the story goes - by Julius Caesar. A group of Gauls had been cornered Asterix-fashion by one of Caesar's garrisons. To prove that they had plenty to eat, the Gauls sent out an old cockerel to the enemy, with a message around its neck saying 'Bon appetitf Caesar promptly invited the leaders of the Gaulish tribes to a dinner, in the course of which he served the cockerel (cooked to perfection in wine and rare herbs), promising the Gauls that if they surrendered, he would not only give them the recipe, but personally ensure that they and their descendants ate well and lived in prosperity for ever. Did they believe him? The story doesn't tell... Make this dish the night before serving to let the flavours infuse and intensify.

ingredients
4 pigeons jointed into 12 pieces (
500 ml red wine
1 tbsp olive oil
150 g thick-cut bacon, cubed
12 small shallots, peeled
200 g button mushrooms
1 clove of garlic, crushed, peeled and chopped
3 tbsp flour
300 ml pigeon stock
2 bay leaves
2 sprigs of thyme
sea salt
freshly ground black pepper
a bunch of flat-leaf parsley, chopped

method
1. Trim the pigeon pieces of excess fat. For a really rich flavour, marinate the pigeon pieces in the wine overnight.
The next day, pour off the marinade (keep it to cook with) and dry the pigeon well with kitchen paper to make frying easier.

2. Heat the oven to 180°C/gas 4.

3. Put the olive oil and bacon in a large ovenproof casserole dish and cook over a medium heat for 3 minutes. Add the whole shallots and cook for a further 6 minutes until browned, then add the mushrooms and garlic and cook for another 2 minutes, stirring well. Remove the ingredients from the pan and set to one side.

4. Place the pigeon in the casserole and cook until golden and sealed all over - do this in batches to get a good even colour. Set the browned pigeon to one side.

5. Reduce the heat, add the flour to the pan and allow it to absorb the fat. Don't forget to mix in all the coloured cooking bits on the side of the pan. Slowly stir in the red wine (or reserved marinade) and pigeon stock and bring to the boil.

6. Return the pigeon, vegetables and bacon to the casserole dish, along with the bay leaves, thyme and seasoning. Cover and cook in the oven for 35 minutes. Just before serving, add the chopped parsley.

Mine mostty go into another kitbox away from the good ones and they get flown when I have time.Sometimes my neighbour gets the odd 2 or 3 for dins but more I keep em to lessen the chances of my good ones getting caught by the falcon,fly em first.

Chai - You should try it. If you can eat chicken, the nastiest bird on the farm, you can definitely try a clean grain eater like our pigeons. Awesome stuff!

For now I take mine to the local sale barn, a swap meet, or sell them to people who just want some birds to watch fly and as long as they will flip around a few times they are happy. I also sell a few birds to kids or other people who just want show birds.

Home grown pigeons are the cleanest bird out there. If push came to shove, I wouldn't have any problem with putting the culls in the pot! Mind you, rollers are one of the smallest breed out there, German Giants would be a better choice!

i would of ate mines.

rollers are domestic pigeons.
if you let them go out on there own, they will die of starvation.
if there lucky they will go live with wilds, other than that they will die on the streets.

T-town-rollers - That is ridiculous stating true breeders of the Birmingham roller who eat livestock are not true breeders and it is not even logical. Anyone who has lived on the farm, raised livestock for show, and consumption knows exactly what I am talking about. Do you think that the farmer who raises cattle for show never kills one for consumption? Do you think that J.Leroy Smith, one of the greatest roller breeders of all time, and incidentally who raised show chickens did not eat them? Yes he did! Now, if you say J. Leroy Smith was not a true roller breeder then I have nothing more to say!

My dad loved squab and we ate it frequently while I was growing up. Young pigeon is a lot more desirable than dove or quail to me!

I raise and show rabbits as well and have been eating them all of my life. I was raised on a farm and grew up watching my dad butcher rabbits, chickens, cattle, and hogs. We did not make a habbit of butchering our own cattle or hogs and normally took them to the local meat locker to get them done but one time a truck clipped a electric wire and it fell in the hog lot and killed a couple so we had to butcher them ourselves and we had a steer get out on the road and get hit one time and we butchered it.
That is the trouble with people today they forget where their food comes from. I would not have a problem eating pigeon it is just that I have never done it. My brother goes dove hunting from time to time and eats them so I guess it would not be any different.

T-Town-Rollers, People drop of dogs and cats to starve, they can no more hunt to survive then a roller can forage for food. Can't eat it, at least be human enough not to starve it to death! Can't cull, find a new hobby!

RABBIT CHILI

Skin, clean and cut into pieces:
1 med. sized rabbit
Brown the pieces in large skillet in:
2 tablespoons of olive oil.
With:
1 clove of garlic; pressed
Add:
1 cup of hot water or light chicken broth or vegetable stock
1/2 tsp. salt
1/2 tsp. pepper
1 6oz. can of tomato paste
1 tsp. chili powder
2 cups kidney beans

Cover and simmer gently about 2 hours. Before serving, sprinkle with 2 tablespoons of grated cheese.
Place under broiler until cheese is golden brown.

roll 1, thats just as bad! Why would you start a newbie off with birds you would not have yourself? Our job is to promote the hobby and the breed, not to discourage by selling or even giving inferior birds to anyone, much less a newbie. I have no wish to come off as a hard ass, but if people are not prepared to respect our chosen hobby, then simply find another one. This thread is about culling, a neccessery part of our breeding program. I think it is far better to humanly except our inferior birds as food then to discard them as so much trash or to salve our own conscious release them to starve, and yes, selling them for pennies to a pet or feed store amounts to the same thing.

If you let your birds go out in the wild what does that say about you being a pigeon man think about it..they can't survive on there own they depend on us..I rather cull it before I let it go hungry on his own..
When I was a kid my Mom cull a king homer of mine to make a pigeon soup to get us well we were poor all 12 of us big family..couldn't afford going to doctors or eating good food .it was hard time for us..but what laron says about the chicken in supermarket is true .they feed those things chemicals .and everything is full of preservatives.look at the population how many are sick now and obese. anyway I don't want to get into that here...but I would eat a pigeon but just that a roller to me isn't big enough I would rather have a king homer more meat.. but a pigeon soup anytime our birds are clean fed the best grain and vitamins clean water if you cook one for me damn right i eat it..I know I be ten times healthier than if i ate something else in the market..

Ralph, Seems like the Bronx must be in southern most part of Ohio! I was raised as poor as any and fed my family with rabbits caught on a snare line checked every morning before school. My brother and I would go to the local viaduct at night with a flashlight and catch commies for the stew pot! :) I guess pigeons and poor makes for brothers no matter where you are.

Just made us stronger, brother.

Oh yea Thom you got that right.. but wait a minute you ate rabbit I'm jealous now you ate better than me .lol...the first time I ate rabbit meat was when I move here(PR) and my neighbor offer me a rabbit to eat it taste like chicken to me .very good tender meat..my wife didn't like it.. come to think about it I bought my daughter a rabbit and she couldn't see herself eating it the day we were invited to eat..so I understand why Andrew feels like that eating his birds..but what you can do Andrew is give it to someone who does ..I have a friend who I give my culls to eat because they live in the mountains and are poor .so he takes them with gratitude I rather see him eat them than the BOP..now I tell you one thing don't give your birds to anyone to eat just when you finish medicating them..

To each his own, thats just saying chicken breeders cant eat chickens, or duck breeders cant eat ducks, breeders who enjoy their birds. The roller PIGEON is at one point a squab. I wouldnt eat it for my own preference. Have I? Yes when i was younger my dad used to make a squab stew.

Kop you of all people should have more tolernace of subjects. Many dont disciminate your post of the same yellows and reds. Each topic and everyones comments are deserving. If you have something to say let it be constructive and thoughtful. We know you dont cull your birds, you've stated it on previous posts. thats fine, no one ever stated your a dumbass for not doing so! remember to each his own.

The topic was actually a good question.. I didn't really mean dumb post/topic.. I just think that is gross.. I never really have birds that really need to be culled, because I don't breed that much, and I haven't been into big competing *yet*.. I don't think it is really humane. The only time that possibly may be appropriate is when the bird is a roll down and is continuously hurting itself..

I think culling(actually killing)a bird because of its performance/characteristics is terrible.

It's like the same thing as saying why don't we get rid of everyone thats handicap because they are different and not perfect or what we are looking for...
